If you've been here for a hot minute, you surely know I'm a huge fan of roast dinners and elaborate meals any time of the year, but especially in the fall and winter months. There's just something so comforting about a roast dinner and it's the perfect occasion to get together with family and friends and put some love into each part of the meal. This Vegan Toad in the Hole is a wonderful addition to your family gatherings and fits just perfectly alongside your typical roast dinner elements. I'm happy to share this veganized recipe of a British classic with you!

What is a toad in the hole?

Toad in the hole is a typical British dish, which traditionally consists of sausages in a Yorkshire pudding batter, baked to perfection in the oven. It combines a wonderful mix of textures ranging from crunchy because of the Yorkshire pudding element and soft and chewy from the sausages. It's an all-around delicious British dinner or Sunday roast option that will keep your table guests satisfied.

On this occasion, we are using vegan sausages and a vegan Yorkshire pudding batter. The vegan sausages that I have used for this recipe are the Brilliant Bangers from Quorn.

Ingredients & Notes

For this recipe, I've used a pack of the Quorn Brilliant Bangers Vegan Sausages (270g), which you can get at Asda, Waitrose, and Tesco in the UK. They're a great source of protein as they contain Quorn's mycoprotein, which is a sustainable and nutritious choice of protein. They cook wonderfully both on the hob and in the oven, which makes them perfect for this vegan Toad in the Hole recipe.

  • rapeseed oil - The rapeseed oil is used in order to grease the oven dish on this occasion.
  • plain flour (all purpose flour) - The base for our Yorkshire pudding batter is plain flour also called all-purpose flour. Don't use any strong white flour on this occasion.
  • cornflour - To team up with the plain flour we are using cornflower. This will create the perfect soft and fluffy texture of the Yorkshire pudding batter and help with rice in the oven.
  • baking powder & baking soda (bicarbonate of soda) - We are using both baking powder and baking soda for this recipe to give the Yorkshire pudding batter the perfect rise and to create the typical Yorkshire pudding texture.
  • salt - A little bit of salt will make the flavours of the toad in the hole come together just perfectly.
  • turmeric powder - for colour (optional). For a wonderful golden colour, we are adding a little bit of turmeric powder to the batter.
  • plant milk - To make the batter come together I am using plant milk in particular soya milk for this recipe, but alternatively, you can also use your favourite type of plant milk. I would recommend going with either old almond or soya on this occasion.
  • apple cider vinegar - Apple cider vinegar is our acidity element in this batter and it will help activate both the baking powder and baking soda to create a wonderful fluffy rise.
  • dijon mustard - For a wonderful savoury flavour, we are adding a little bit of Dijon mustard to the mix. I have used French Dijon mustard on this occasion as it brings the perfect flavour without being too overpowering.

Instructions (Step-by-Step)

To create this vegan toad in the hole, start by preheating your oven to 220°C (428°F). Alongside, grease your oven dish with rapeseed oil. Place your vegan sausages into the oven dish and roast them in the oven for about 10 minutes or until they start to become golden.

In a large mixing bowl combine the plain flour with the cornflour. For best results, I would recommend sifting both flours into the bowl. Stir in the baking powder and baking soda as well as the turmeric powder and salt.

In a separate jug, combine the plant milk with the Apple cider vinegar and mustard. Set aside to curdle for about 10 minutes.

Combine the plant milk mixture with the dry ingredients into a fluffy Yorkshire pudding batter. Carefully remove the oven dish with the sausages from the oven and gently pour in the batter. It is best to carefully pour in the batter from one of the edges of the oven dish to not cover the entire sausages as we want them to be visible after. Alternatively, remove the sausages from the dish, pour in your batter and add the sausages back in afterwards.

Roast your toad in the hole in the oven for about 10 minutes or until the top of your Yorkshire pudding is golden.

Carefully remove the oven dish from the oven and serve up your toad in the hole alongside vegan gravy and your favourite vegetables.

How to serve toad in the hole

Traditionally toad in the hole is served with onion gravy and vegetables on the side. As an alternative to onion gravy, you can also serve other types of gravy such as mushroom gravy or red wine gravy with this dish, which I have both found really delicious alongside.

On this occasion, I've served up my toad in the hole alongside a delicious vegan mushroom gravy. If you would like to try the same kind of gravy, here is a list of the ingredients I've used:

For the mushroom gravy:

  • 150g chestnut mushrooms, sliced
  • 2 tablespoon dairy-free butter
  • ½ yellow onion, finely diced
  • 2 cloves garlic, crushed
  • 1 tablespoon tamari soya sauce
  • 250 ml dairy-free cream
  • 250 ml vegetable stock
  • 1 teaspoon cornstarch + 30ml water

Simply melt the dairy-free butter in a small saucepan, then cook the mushrooms onion and garlic until softened. This should take about 5 to 10 minutes. Stir in the tamari soya sauce, dairy-free cream, and vegetable stock and bring to a boil. Simmer for about 10 minutes. Transfer to a blender or food processor, or simply use a stick blender to blend the gravy into a smooth sauce.

In a small bowl whisk together the cornstarch and water, then stir the mix into the gravy. Heat for 2 to 3 minutes or until the gravy thickens, then serve the gravy alongside the toad in the hole.

Notes

  • This toad in the hole is deliciously served alongside steamed or roasted vegetables and your favourite gravy. I personally love serving this dish alongside mushroom gravy. You can find a recipe for vegan mushroom gravy in the blog post above.
  • Toad in the hole is best served straight away, but you can also reheat it in the oven the next day and smother in delicious gravy (been there!).
